Organic Oolong Tea

The manufacture of Oolong tea is an intricate balance of withering, rolling, shaping, and firing are similar to black tea, but much more precise attention to timing and temperature is necessary. The final step, baking or roasting, is exclusive to oolong tea and is the real art to this tea.
